Korean Inspired Lamb Ribs, greasy and tasty

One Greasy, messy, tasty feed.
They lifted our travel areas a bit, so I was able to go to a local market.
Grabbed some Lamb Ribs, real beer food normally.
Made up a marinade using Gochujang paste as a base.
Oil, Garlic, peanut oil, brown sugar, honey
ginger sesame oil, spring onion.
Let it marinade overnight.
Smoked using snake method with cherry low for 5 hours
could have gone a bit longer but i was hungry
wife hammered them

Close enough, I added a bit of Hoisin,which as you know is a blend
And thanks,,access to Dandy market again.
 
Those look delicious! I just found a local farm to source any lamb cuts I would like so I think I am going to have to try your "Recipe".

You obviously have better lamb than what I can get.
From two racks I had maybe 7 bones that had meat on em. The rest were pure fat.

Believe it not, that about right, or close, half went in the bin
they are very fatty, these should have gone longer, but hunger got the better of me

For the uninitiated, please note the careful use of the grid and the deep tray.

Take note of this, or you will have a fat fire like you would not believe
