Pork Butts for Office Lunch
A co-worker who recently moved back from Alabama was headed back down there on Spring Break with his family. He decided he was going to bring back 10# of shrimp. I offered to cook a few pork butts and beans and add to the lunch. We then got another guy in the office to cook dutch oven potatos and dutch oven cobblers.
The lunch will be tomorrow, but I'm cooking the butts today and the beans tomorrow. Since I know it didn't happen without pics, here you go................. Two of the pork butts are rubbed with my homeade rub and the other one isn't rubbed at all (diabetic mod). I've got a co-worker who is diabetic so I wanted to make the pork friendly for him (plus I wanted to see what a smoked pork butt would taste like without any mods).

Butts are wrapped and sitting at 160*. Smoker is sitting nicely with a lid temperature of 250*. I threw on a 1/2 rack of bb ribs since I had a little room left on the top rack. Will post pictures later to prove I wasn't just loafing around today (at least that's my story).

Well,.........it's done and in the fridge. It went pretty well except for the ribs. They were extra meaty loin back ribs and I cooked them like they were spare ribs. They were ok, but not what I had in mind when I put them on.
Pork went very well. Estimated that they would be done at 2:30 and actually they finished at 195* at 2:40. Should be some good eating tomorrow. The last picture makes the pork look really mushy, but it didn't really turn out that way. Enjoy! ribs pork with no rub butt #1 with rub butt #2 with rub pulled pork

They didn't have that great "rib" taste. They were a little dry and not as tender as they should be. But hey......bad ribs are still ok.

what did you think of the no rub butt?
I am diabetic and will be trying it this weekend ..... was thinking maybe some garlic powder and onion powder with some black pepper ....... maybe I will just have to do 2 butts Thanks for the insperation
