Default Keeping Thawed Pork Butt in the Fridge?

I recently picked up 2 9lb twins still in cryovac.

It's been in the fridge for a week waiting to be smoked.
I know, I know.

My issue, although minor is that I feel it's too late today to start them. I don't want them turning south on me.

How long is too long in the fridge?

I am not sure how long You dont want to freeze them If you can cook at a higher temp so you can get them done

Cryopack should be good for 7 days. You'll know once you open and rinse. If it smells, it goes.

Since it sounds like you just purchased them, isn't there a pull date or freeze by date on the package ?

Not that I can see.

I think I've had them for about 10 days.
I'm gonna throw them on the UDS just for grins with chicken legs and tri tip.

Gonna be a gamble, but we'll open her up here in a few to check.

Thanks for the advice!

Have to remember to plan a little better next time.

Butts are now in the drum.
Monitoring temps with my new ET-733, which says a tad over 300 right now.
Trying to bring it down a tad.
Goes to show the dial in the side of the drum is a rough estimate...Really rough.
