Default Spatchcocked chicken with pronz

Here is a spatchcocked chicken I smoked/bbq'd last night. 2 hours at 275-360. I went with mesquite lump and maple chunks.

Enjoy the pron...I couldn't figure out to tuck her legs in though.

Wifey said it was the best chicken ever.

I rubbed her (the chicken) with garlic powder, pepper, allspice and Old Bay. Plus a little EBO.

I glazed her (the chicken) with a miuxture of sweet asian chile sauce, cider vinegar, and some Sweet Baby Ray's.

ps: You don't need the fancy kitchen shears when you hack out the spinal column and breast bone.

Just use your good boning knife. And sharpen it.

Cuts from dull knives take more time to heal.

It's kinda fun that the marks on the product are reversed.
The dark stripes are from the smoke, not the grill.

I didn't feel dirty till after the 3rd close up of it. I don't feel bad about it though. Nice job.

I'd love to see pic's of the prep of getting the bird that way. Anyone have a link?
