Sirloin Tip Roast Tacos
I posted a thread last week asking what to do with a sirloin tip roast I was gifted. I think everybody agreed that I should cook to medium rare and slice for sandwiches. I trust the Brethren but I don't really like roast beef sandwiches.
So I made tacos. Seasoned with a fajita rub I make and smoked over B&B lump with a few small cherry chunks till I liked how it looked. IT was around 140. Braised with beef stock, onions, peppers & cilantro. Ended up pulling pretty nicely. Finish IT was around 200. Added some of the braising liquid to the beef after pulling.
