Default Sirloin Tip Roast Tacos

I posted a thread last week asking what to do with a sirloin tip roast I was gifted. I think everybody agreed that I should cook to medium rare and slice for sandwiches. I trust the Brethren but I don't really like roast beef sandwiches.

So I made tacos.

Seasoned with a fajita rub I make and smoked over B&B lump with a few small cherry chunks till I liked how it looked. IT was around 140.

Braised with beef stock, onions, peppers & cilantro.

Ended up pulling pretty nicely. Finish IT was around 200. Added some of the braising liquid to the beef after pulling.

Tis looks great. Thought that sirloin was to lean to to pull but it looks well marbled. So the roast must be different than a steak and more like a chuckie. Nice tip !!!!
