No real set plans just the family so a much needed sleepin in day especially after last night . Got my first butt going on the MB560. Trying with water just because. Was nice getting a charcoal cook going in 3 minutes. We will see what happens later. Happy 4th and Cooking all

So trying something new and different to me at least. Pictured just before wrapped and wrapped. Foil pan wrapped with PBP. My thoughts are to keep the juices in the bottom of the pan while letting the top breath retaining bark...time will tell...

I'm with you on butcher paper over foil, at least on brisket for me. I haven't switched on a butt yet, so looking forward to your results and opinions.
 
So all done and I was told by all to never use full foil again. Bark turned out great and got to keep the juice :grin:. Other than a little issue with the probe stuck at 193 for a way too long it didn't dry out...whew.
