I am sailing the Bahamas this winter. I found some fire brick behind an abandoned house, so of course I built a smoker and did a 5 hr rib cook! Used mahogany and fig from the property. Anyone using mahogany for ribs, it was my first time, but really enjoyed it. Fig wasn’t as noticeable.

Cool cook. What would you compare the mahogany smoke flavor with?

welcome to the club, adapt and concur awesome!

Welcome to the Brethren!!

If that was natural Mahogany and well dried there should not be a problem, but if it was dried lumber, I wouldn't use it. Mahogany has a heavy oil in it that can be harmful when burned. Again, from natural trees, no problem, but not lumber.

That is a great home built smoker!!! Dont forget the cook pics!!
