Please accept my entry: Turkey Breast “Fatty.”

Turkey breast butterflied and filled with a mixture of homemade green chile, duck fat, and breakfast sausage that was puréed, then reduced. Wrapped the whole thing in bacon and cooked on the WSM at 375.

Please use the first pic (on the grill) as my official entry.

maple rubbed and then maple glazed smoked turkey and a twice smoked peach rubbed Ham glazed with a habanero peach glaze

Apple juice/butter/honey fermented garlic injector sauce, a simple Adobo seasoning rub, 3 hours hickory/mesquite wood rotisserie bbq, savory sweet apricot soy sauce preserve glaze

20# big ol boy. Came out fantastic. Made a smoked turkey and sausage gumbo with the leftovers but missed the entry deadline for the previous throwdown. !st picture is my entry.
