Default Banquet Catering

Hi folks,

I'm doing a banquet this weekend and wanted to see what the group thought of my food numbers. I've had a few friends help out and a member from here too!

Here's my numbers.

150 heads - Racers Banquet - Good size eaters

Two meats - Raw Numbers
Pulled Pork - 80 lbs.
Pulled Chicken - 60 lbs.

Mac N Cheese - 3 pans
Cole Slaw - 4 tubs (Gordon 5lb.)

Banana Pudding - 2 pans

Serving size - 4 oz on the meats. 3.25 on the mac.

Soo. what to you guys think?

Appreciate any feedback or anything I might have missed.

So you are planning on 45 pounds or so of cooked pork? That could be light. Would you post the pulled chicken recipe?

Do you plan on having the meat station at the end of the line? And will alcohol be served?

Below are the numbers I cook for an event like yours. Yes, I will have some leftovers (not tons) but that's way better than running out.


150 heads - Racers Banquet - Good size eaters

Two meats - Raw Numbers
Pulled Pork - 80 lbs. 94lbs
Pulled Chicken - 60 lbs.

Mac N Cheese - 3 pans 5 pans
Cole Slaw - 4 tubs (Gordon 5lb.) 25lbs

Banana Pudding - 2 pans 2-3 pans but this is one item that is hard to get a good count on. Each group will eat drastically different amounts. I've had a pan feed a group of 100 and I've seen 30 people eat a pan.

Serving size - 4 oz 5oz on the meats. 3.25 easy 6oz plus we feed an average of 35 people on a full pan of mac on the mac.
