I Thawed out a 10lb bag of chicken leg quarters.
I cut the drumsticks from the thighs and removed the skin from the thighs.
I rubbed everything down with my Magic Dust (The recipe is in this Q Talk thread: https://www.bbq-brethren.com/forum/showthread.php?t=296452. )
I omitted the salt and sugar this time in an attempt at making it healthier.
The rubbed yardbird went into the drum smoker at about 275ish till the internal temp hit 165.
I tore up a few leaves of romaine lettuce and put them on a plate with some sliced green onions, radishes, baby carrots, and long green chilies.
I finished it off with a sliced chicken thigh an a handful of grape tomatoes.
