It’s 28F with light flurries..perfect Shirley weather!

Got the Shirley fired up

Now we feed smoker and wait….
 
-Smoked with cherry in the Shirley Fab smoker.

-Rested for 30 min and then sliced thin for sandwich

Sandwich: Crusty Italian bread slathered with a house made garlic herb aioli. Slices of Porchetta topped with caramelized onions and a spinach arugula mix.

I haven't had porchetta in a long time and now I'm jealous. Fantastic!

I also never had it off a smoker before either. Does it pick up much smoke at 375?
