Default Armadillo Eggs - how do you make them....

Big Al and I have gotten hooked on ABT's.
Had some today with Jalapenos and Italian Roasters from our garden tonight.

I have been searching on Armadillo eggs - time to try something new - how do you make yours, what have you tried that you didn't like etc. Tell me your story.

Good stuff! But I think next time I'll try blanching or roasting the peppers before I fill and cover with Jimmy Dean.

Nothing special.
Find good firm peppers. Core them with an apple corer. Fill with cream cheese, wrap in your fav sausage. sprinkle with your fav rub. smoke for 2 hours or untill done. I do 170 in the sausage. I do not precook the peppers in any way. I like the crisp contrast to the sausage when you bite them.
3rd place last week 2nd this week in the anything goes cat.

Thanks for the links guys...my wife and I are drooling. I have not done any Armadillo eggs yet...but that is fixin' to change very shortly!
