Never seen Crystal around these parts, only Morton. Have heard the Crystal is hollow, so you need to be careful how much Morton you use or you'll over salt things.

Bone's got a little wiggle, and I've planned plenty of time for a long hold in a warm oven before I do the chop.



Smells wonderful. It's been a while since I last took this road.

Looks like I'm the only one awake in the household... my girls (to include the cats) know it's Sunday afternoon nap time. Maybe I'll join in the effort.

First off great looking butt. Pretty neat technique. Will have to try. Just a quick fyi, Diamond Crystal is the salt. Growing up a huge salt mine by us. Seems to rotate between Morton, Diamond Crystal and Azko?

Cheers, guys.

Circle the date on the calendar - Munchkin came back for THIRDS on the pork... couldn't get enough, especially with the Yes, Dear Yellow or the Charlie Mills. The Scott's was too spicy for her (as expected and explained to her beforehand), and the tanginess of the Yes, Dear Red wasn't her cuppa... Thirds! This kid must be in a growth spurt.
