Having a live music event at house tonight celebrating our first summer in Ohio and trying to keep away the winter blues.

I found these two left handed beauties at Costco. I hope I do them justice Texas style for our new Ohio neighbors.

Oh yeah. I’ve read that lefties are more tender than righties due to how cows lay down. Have you noticed that? Any tips on telling apart the lefties from the righties?

Look at the picture. See how the brisket, lying in the pan fat side down, the grain of the flat angles from left to right?



Legend has it, back in the early 2000's, a Texas man by the name of Connie Baker, of team Lil Pit of Heaven, told his secret to tender brisket at a cook-off one Friday night while sitting around swapping tales and drinking cocktails. He said that steers lay on their left side and when they go to get up, they push off the ground with their right leg. Thus, the left leg doesn't get used as much and as a result, the left brisket is more tender than the right brisket.



Any truth to that? I don't know. Back then I did several side by side comparisons and couldn't tell any difference. But I do remember how long and hard my butcher laughed when I told him the reason why I wanted a left hand brisket.

I thought that the whole "cows lay on their left side" thing was total BS. I've never spent time with beef in the living form so I have no idea.
 
Sorry. Sliced the first brisket without taking the obligatory bend test. It would hold, but broke while putting it on the platter. A little over done. Still moist and flavorful. A few pictures of the friends on the lake.

Even though teh bend was a little loose I am sure that was the best darned brisket any of them ever had. Great looking time!
