Makin' good progress.

Time to whip up a batch of sauce/glaze. I know that this isn't exactly what Buccs mentioned, but I like to use a high-sugar, deep/dark-flavored BBQ sauce with the apple cider vinegar and the Sriracha... then, it needs a bit of lime juice. - Completely to taste + a bit of a simmer down to meld and strengthen the flavors.

More to follow.

Glazed...

Resting in a warm oven.

CINCHOUSE is off to get Baby Bok Choy/Choi and some sort of faux-papaya salad. Green Papayas are tough to get out here in the High Plains (duh! )

CINCHOUSE found some mango at the grocery to substitute for the papaya.

Someone is a big fan of the shredded mango...

Sum Tom Salad with Mango....

I present you Sriracha Glazed Thai-Inspired SRF Kurubota St. Louis Spare Ribs served with garlic sautéed bok choy and mango som tum salad.

Our munchkin loves those bones, despite the heat... she gets upset, then eats some more... then gets angry... and eats some more.

Many thanks to a very kind unnamed soul that allowed us to share this meal with each other and with you.

Cheers! I went back for seconds... and CINCHOUSE will probably beat me to to thirds on the bones.
