BBQ Pork Loin Chops...
Made a few Boneless Pork Loin Chops on the Weber Performer. Brined them overnight in a little kosher salt, brown sugar and spices. Smoked with a some Apple and Hickory chunks, then grilled and finished off the heat after saucing. Very happy with the results. When I was a kid, pork chops meant dried out, breaded, fried, then baked, thin slices of pork that required lots of beverages to wash them down. These chops had plenty of moisture.
Few pics of the cook. Don't mind the canned carrots for the side. Not a lot of time to do sides after work... Thanks for looking!

I go big on sides when doing a bigger cook and there is time, but when cooking after work, it's usually a canned or frozen veggie...

Gorgeous. And no shame at all in the frozen/canned veggies. Nutrition and such is maintained, sometimes buying fresh means buying out of season, and time is always short. All looks amazing!

Did you cut your own chops or did you find them that thick? I always have trouble finding 2" thick chops... nice cook, wish I was there to enjoy them!
