Brethren - where do you get your plate short ribs to Q. Really looking for either online or if someone is in the San Diego area and knows of a good place. About time I give them a shot on the smoker...
 
If you’re talking about the “plate” short ribs I get mine from a local butcher. Much better than the chuck ones. I’ve never been able to find the plate ribs anywhere else (just chuck).
 
I have lost count how many butchers i have asked the same exact question, here in San Diego. None of them knew what those numbers meant. Most understood after careful explanation, but never once said " I know exactly what you are referring to and can get them for you". Please, let me know if you find a source!!! I'd like to do them at least once.
 
I have only had them once and they were the best beef ribs I've made/eaten. I got them at Whole Foods, I have not seen them there again.
 
They look like what I get from my local Hispanic market. I just ask for them uncut and take the whole bag, otherwise they are cut for Korean style bbq.

What are you guys paying per pound? I went to RD in Dallas last week and they were $8.49 per pound. I noticed yesterday at Sam's they were $7.89. While I would love to try some, I think I will stick with brisket and steak.

Check your local Mexi-Mart or an Asian/Korean grocery. Most places around here only sell the chuck variety, not the plate. If you see them sliced up in the butcher case, then they have uncut ones in the back.

Felicia’s Meat Market & Deli in Elk Grove Village (Meacham & Biesterfield Rd.).The owner, Jim, cut them right in front of me. You want bones six, seven and eight (chuck are two-five). $6.89/lb. They were unreal. Came out great on the stick burner. I’ve made chuck short ribs from Whole Foods before and those were good...but these were even better.

I get my chuck 4 bone plates (2 plates per cryovac) from Safeway and pay $5.99 to $6.99 a pound. The 123A I got at Whole Foods were 2, 3 bone plates that I paid $5.99 a pound. Below is a pic of one of the 123A plates.

Just stopped in Felicia’s and picked up some plate ribs. They are huge can’t wait to try them this weekend. Thanks for the tip.

The ones I made from there were crazy good on my offset. Literally pure meat butter goodness. Remember to take pics of your finished product and post them in this thread!:heh:
 
If any of you guys in chicagoland area are looking for the electric cambros they will be on sale this month for a few hundred bucks. Of course they are used but great condiiton. The 4 of ours have been great so far. PM me for details if interested
 
New or forum so I apologize if I am misunderstanding. I have been getting uncut short ribs 4 to a plate at local market called Stew Lenard’s. I can get four plates of 4 each ribs 8” long in cryovac. Are these the same being mentioned?
By the way I actually cut them in single ribs before I smoke thus creating bark on all sides.
1st picture dry rub of coffee, coco and Chile
2nd picture dry rub Pepper and Salt

Both were delicious.
