Talking Machaca con Huevos

How do you use up a large container of Pepper Stout Beef? Well one way is to make Machaca Con Huevos with it.

In CI skillet with some additional onion and peppers.

Add the huevos.

And plate.

Muy, muy bueno!

Love me some PSB. Don't think I have ever had to find another way to finish the leftovers. Never been enough that I got tired of it just on a roll.

That being said, that looks really good. I might have to "accidentally" make extra...

Pepper Stout Beef is usually beef chuck that has been smoked until partly done, then braised in stout beer with pepper and onions. Good stuff.

There used to be a place out in Hayward, CA that made the best machaca and eggs, I would stop there 2-3 times a week. But, they got shut down, something about their air drying the beef on the roof of the building not being per health codes.
