Salt, pepper and smoke

Been doing s&p for a looooong time. Tri tip and brisket has to have a mustard covering per wife's request.
 
Those photo's literally made my stomach growl. Thanks for that "gesture" right before bed. Darn you! ;)
 
It works great on whole spares, because they have flavor on their own that SnP accentuates. Loinbacks are bland and need something else to give them flavor.

I dont even bother with loinbacks unless they are on sale. salt and pepper spares are awesome to me. most prefer when I good them with traditional bbq rub and wrapped with sauce. to me the s & p ribs tastes more porkierer
