Rotisseried an Ancho/Garlic rubbed turkey for Thanksgiving.

Since there were only two of us to enjoy the bird, there was tons of leftovers.

Made some soup.

And some Mole Rojo Suiza Turkey Enchiladas.

Kettle Roasted Turkey Enchiladas

The day after Thanksgiving was a good day to pick up a couple seriously discounted turkeys. This past Sunday, I cooked one of them up on my 26” Weber and made a tasty meal with the leftovers on Wednesday.
