Hey guys...
I’m cooking a fresh ham for thanksgiving. I’ve only done one before and I forgot approximately how long it took. Does anyone know about how long it would take to reach 155 internal (I’ll rest at that point to reach 165), cooking at 275. It weighs between 23-25 pounds. Thanks in advance.

Fresh UNCURED ham?

At 155 it maybe a bit chewy. It has been a long time for me but I believe I took it to 175 and rested before slicing.



Yes Sir. I’m looking to slice it. Do you think 175 will be better?

That's a big hunk of meat, give yourself a couple of extra hours (at least 10hrs, if it gets done early just wrap in foil and pack in towels in a cooler and it will hold for hours.

That's a huge hunk of meat! I'd plan on at least 10-12 hours and I'd cook it to at least 165-170.

Update us after the cook. Would love to hear how it turns out and how long it took.

Brined for a day and a half with Kosmos Q pork soak. Rubbed with Kosmos Q honey pecan. Smoked with maple at 250 for almost 8 hours, 155 internal. Rested 2 hours. Sliced great and was very juicy. No complaints.
