Default My first attempt at beef ribs

Put on the WSM at 275f, apple and hickory chunks, kbb. Kosher salt, pepper, paprika rub. Foiled at 4hrs, cooked until probe tender. I am really happy with how these turned out. If there was a meat dessert beef ribs would be it, so rich in flavors.

Not bad for 1st attempt. Bone shrinkage looks good. Muscle fibers looks a bit tight, but could be blurry pic.

Yeah my last pic was blurry a bit, I was too excited to dig in, and didnt check how my picture was. These were so good, all I can get a picture of now is bleached bones.

Also, a really sharp knife can be deceiving as well. The bite test how ever, is fool proof.


And a really dull knife like a serrated steak knife can also be deceiving, lol.
