If you hang use more than one hook. The key is that after they reach tender (about 200 degrees, probe tender and bone wiggles freely) then wrap and rest in a cooler filled with towels for at least an hour. Longer is better if you have time. Lets the connective tissue continue to break down and comes out very tender. |

Man, you guys are some bullies. It takes a big person to post a fail cook amongst you guys, and I expected to get some tips or something not "maybe the oven is for you" from Sako.
Yes, I screwed up. Im used to cooking on an egg and thought it would take a similar amount of time so I ran some errands. I told the wife to keep an eye on the thermometer remote and pull when it beeps, but my remote thermometer died midcook and never got an alert it came to temp. By the time I checked it was too late and I made jerky. Yes it was a tritip, at least according to Costco. I got the smallest one because its just me since my wife is vegan. |

As far as tips, don't leave the cooker for a short cook. You want to leave for a while during an 8 hour pork butt cook or a 6-8 hour brisket cook that's fine. Tri tip cooks more like a sirloin or a flank steak. Needs more time than a ribeye or a filet but nowhere near as much time as a chuck or a brisket. |

Well DAMN!!! I was already excited about firing up the PBC this weekend but ya'll have gotten me super pumped now!! I'll be doing a pork butt but I'm tempted to do some wings as well!
