Jeanie, your creativity always inspires me to try new things. I've just discovered picanha recently , and got another today on sale (we don't call it that around here, and you have to ask for it specifically as cap, and don't trim the fat cap). I may have to try something different with it!

I didn't need an immersion circulator either, but ended up getting one a few years ago. It was just a mid-range Anova, but I ended up loving it. It croaked on me a couple months ago & I almost cried. My new birthday/Christmas present arrived the day after Thanksgiving. It's the Anova Pro rated for continuous use. We'll see how this one holds up to infrequent use...

I have a half chuck roast bathing right now. Been on for 14 hours so far...a few more to go until supper...
