Another perfect day in San Diego and had the itch you just have to scratch.

Butt from wholefoods ($4.99lb) I think it's a little less swiney tasting than smithfiled and I can't afford SRF bershire on a regular basis.

It sitting nicely at 275 now - nice a clean smoke




Getting into homemade fermented hot sauce and ginger beer





While post again at 4 hours - time to let it sleep

4hrs in at about 265f. Quick spritz and back to sleep.

Stayed at the beach a little too long, temps were in the 270 region the whole time but it was a little dry (could be the outside section we tried). The whole butt felt very moist when I pulled it. Hopefully more moisture once it sits in the vacuum bag. Overall, a great day.
