Default Planking

Hey guys, I was reading about planking in a Weber mag and it told me something I didn't know (not hard to do). It said that you can plank on [most] any board. I've heard of Shad planking which I think is on cedar. And Ive heard of using alder, but they said you can plank on oak. They showed a pic of 2 nice thick juicy fillet mignons smoking on an oak board and man did it look good! Has anyone tried it? I'm going to have to give it a go.

Where is the best place to buy planks for smoking (on a Weber). How thick should the planks be?

For us it would be Siewers downtown. They have a cast off rack or better yet wait until I'm doing my next job and I'll get you Oak. Big thing is you do not want treated or coated wood, HD or Lowes id a big no no. Most of what they have has some sort of coating on it to keep it from craking.

Jim Minon has a killer way of cooking Salmon on a cedar plank tahk you need to try.

One of my teamates(cuz)works on the side in a cabinet shop and gets the scrap off the jobs.He says it works great .I've never tried it but would love to.

Hey Trout, I did a search on planking before I started this thread and I found Jim's recipe. Looks really good! Ive already saved it in my recipe folder and will give it a try soon. I may have farked up and missed the boat though - Ukrops had whole salmon fillets on sale this past week. Oh well, missed that sale but Sam's is always a good place to buy salmon.

I bought 4 cedar planks from Linens and Things. I followed the directions ,and they burnt like a matchstick. Soaked them for 24 hours and put salmon on them . Everyone said that it was good, I also put shrimp on them and the shrimp was nasty
This week I think Im going to make some rib racks ,got the idea from pics here, Ialso need to make new charcoal grates, Im gonna use 1/4 inch threaded rod and weld them up.

Just be sure not to use galvonized rod. Rebar is good.

I think I will take Trout's advice and go for scraps at an old lumber yard or cabinet making shop like Willy T says.

True. Does fish have a caught date posted on the package. I dont think so; never noticed it if it's there. How do you know how fresh it is when its packaged?

We're only an hour & a half from the ocean which has got to be a plus for buying seafood caught off the coast of VA. I rarely buy fish at home though. But when I'm at the beach... it's nothing but seafood for me. Steamed shrimp, crab cakes, scallops, you name it, I make a fool of myself while on-scene.

I'm more of a chicken griller 1st, steak griller 2nd, and then a pork tenderloin griller 3rd. I love grilled tuna steaks and I'll buy them once & a while to throw on the Weber. I've got a fool-proof tuna steak recipe that I'll share if anyone wants it. The key to cooking tuna is never cook past medium. If its cooked done, its done!
