Been cooking for years, but needed a new medium size smoker. Y'all convinced me to try the PBC. Looking forward to using it.. A lot

FWIW Bob if you get a 55 gallon and make a Big Poppa...what he shows is like reverse indirect on the BP which is the like taking the grate to the upper u bolts...raise the basket up and then it's past stupid hot direct grilling.

Too bad ya gotta use that much charcoal in that but at least you can grill.

Your idea of raising bringing your charcoal basket up will be much much more efficient and better than what the video shows.

You are correct Bob. You can also grill a mean anything that you want on the PBC. The PBC kicks ass and takes names. Plain and simple.

Bob's original idea of moving the charcoal basket to grate level and using another grate sitting on the rebar will be way better and use less fuel...besides it'll be up at a better height for regular grilling. Good job Bob..

That was a great looking steak! I personally like to reverse sear steak, but that could easily be done on the PBC as well. I think the videos by the PBC company and the ones by other people, like the one you attached, just show the versitility of the cooker. If you have an extra grate it would probably sear easier setting it up like you did Bob, but if you don't the video shows grilling can definitely be done.

You're exactly right Andrew. Not that i matters but a standard UDS can do the identical same thing but it's just not as effective as it should be or as efficient as a regular grill like a kettle.

Anyone can do what i did to hang meat..I took a cooking grate ( I got a cheapie from Meijer) and cut out the bars except for the ones by the handle and hung rebar from handle side to handle side....the 22.5 I can do 3 rebars exactly like Chicken in a Barrel in Hawaii does. Point being these barrel cookers can be made to do everything but it's just some (as an example) like the BP can grill better. ( or like Bob's setup) Just what i like about the BP is because it's a bigger drum the outer is bigger for indirect cooking.

I really like the size of the PBC for my needs. If I wanted a 55 gallon size I would probably just go with Big Poppa like you did. Mainly because of the intake slides and because I don't wanna make everything.
That's a big reason for my PBC purchase, it works and I didn't have to "work" to get it. And again, I like the size. I was looking at possibly getting an 18.5 wsm before I got the PBC. I just like that size. Who knows about the future!
