Smoked a pork butt last weekend and we've been eating on it all weekend. The wife really loved it so it was a win. I tried something new (to me). I removed the bone and butterflied it, not very good, lol, not proud of my butchering on this.

I injected with strained liquid from a 8 oz. Bottle of Italian dressing mixed with apple juice, Worcestershire sauce, tablespoon of salt, and tablespoon of rub. Mixed the leftover bits from the Italian dressing with mustard, Worcestershire sauce, and rub and used to slather the butt, then rubbed with Sucklebusters Texas Pecan. Smoked it on the Monolith at 250ish on a rack over a pan then wrapped in foil after 5 hours

Thanks Bill, that was my intention to try to get a good bark but keep the grill clean. I had meant to put apple juice in the pan but forgot so I couldn't use the drippings in the end.

Thanks all, your comments got me laughing.

Just to follow up on the cook....

1. I had meant to put apple juice in the pan then put the butt in the pan when time to wrap but forgot so the drippings burnt so I just wrapped in foil like usual.

2. Butterfying the butt and removing the fat cap did sacrifice a little moisture but if I would have had a more even split and used the pan during the wrapping stage I believe would have fixed that. With that said it was still plenty moist and the best bark and smoke flavor I ever had on a butt.

3. The Italian dressing idea came from an episode of Diners drive ins and dives where a guy got 3rd place at Memphis in May so I figured I would try and I've used it several times. But, I've done just as good with not injecting and adding drippings and rub after pulling so it's not really required but I was bored and wanted to play with my meat [emoji16].

Oh my gosh Becky look at his butt it is so big! Looks great especially the sandwich! Love that sign too!
