Default Choice Beef Brisket

Went to the Shelby Walmart looking for packer cut brisket, they had some but huge layers of fat and minimal meat. How do they do that?

Anyway, a fellow walked up and we started a conversation about brisket an Q. I asked if he knew of any other places to buy brisket. He gave me the name of a real farmer's meat market. Way out in the country, on a farm in an old building.

This market has choice, never frozen beef brisket for $2.50/LB. They looked really nice. Bought two, trimmed them this morning and have them in Walter Jetton Mop for a day.

Going to cook them in my converted now not gas oven, It's gonna be good my boys!
