It was slightly on the rarer side of medium rare for the most part, although some of the outer edges were a light medium.

Only time I've enjoyed a cut that looked that good was when Jonny Rotisserie treated Ribolator and I to a 28oz cowboy cut prime rib at FishBones in Orlando a few years back... it's easy to eat the whole thing without lookin' back! :mrgreen:
