Cooking a brisket in the notorious SmokeFire. I am going to use a pan with a wire rack over the top of it. Should I put water in the pan or run. It dry?

Was thinking of putting some water in it but I don't usually cook in pans.

I don't think it can hurt but I've never tried it.

I've done it both ways. Water helps the bottom to not burn the drippings which you can then use a fat separator to get the good au jus.
