Alright sports fans, brisket is on and going down for the long nap.

I forgot to mention what I was using on this cook. I'm using RO lump with a mix of oak and cherry chunks I hatcheted up a little smaller mixed in to the charcoal chute.

Put one large split down in the ash pan for some extra smoke at the beginning of the cook and going to let the gravity feed do its thing. I'll report back in the morning.

Thanks everyone for the birthday wishes!

So it got up to 200 and wasn’t ready yet, now it’s back down to 196 and hangin there for what appears to be a second stall. Can’t say I’ve had this happen before but I’m cooking a little cooler than I usually do

Anyone else have this happen?

My apologies! As you can see from the picture the the brisket didn’t make it past slicing before getting picked at!

I let it go just a hair long but it was damn delicious. Thank y’all for hanging with me and I hope y’all have a great weekend
