It was a long day of smoking. Put on the butts at 9:30 last night and finished early this afternoon. Next up the trout with the dry brine. Did both on the rec tec with hickory. Both turned out great. Super happy about the trout as it was my first time smoking fish. Even the wife liked it and she is not a smoked fish person. Thanks for looking.
