:whoo:I love this time of year, when the McRib gets the royal treatment from Jason. OMG,the anticipation is killing me! I will be checking in all day today.

Ok so I rarely take naps, but fell asleep till about 2pm so just threw the ribs one about 2:15. Not a worry right as I had it burning in at 350 for the hour plus while I slept.

Smoker was set to 350 and with it being 40 out and a little in the rain I'm guessing that thin metal has trouble as all 3 oven therms said 250 :laugh:. At least those racks were all even :thumb:. Also the front gauge said 200, lol. Go figure :-D might need to see if I can adjust. I will say the front gauge on my backyarder is spot on.

I pulled it a bit out of the rain, cracked it to "high" and that got it 300 on the gauges and then tossed the ribs one. Nobody panic as I'm about to have whiskey while trying to get my Whiskey Still to work :becky:

Nice to know that the temp gauge is a little off. But I'd rather they be even inside the cooker.

I'll doing a boil test tomorrow to see if it is off and maybe get an inexpensive replacement if needed. In cold weather if you had like 6 butts in there I'd guess you'd need a while to get all that cold meat up to where it would maintain above 250. But as of now that is just speculation.

But it has been holding temp fine cranked at "high".

Wrapped after 2hrs with some more rub, agave and the land o lakes squeeze which is pretty solid and made with real butter vs the parkay for those that get triggered by such :becky:
