Ha. I used to always not get a good sear. I just get the pan hot and by the time both sides are seared the middle should be just about right.

This was the first time in the cast iron and they were great.

What else is everyone putting on them other than s&p? I added a little chipotle, but always like new flavors for seafood.

Restaurant Depot. They usually have really good dry scallops - better than anywhere else I've gotten them from. Their seafood department carries quite a bit of stuff.
