With an enhanced bird, I frequently just rub the skin with sesame oil and spices.

We've cooked three or four turkeys and have never used a brine(bought the butterball brand) and they turned out fantastic. I butterflied mine, as I do with my whole chickens, and cooked it around 300*. You can get some good season on the underside of those breasts when you butterfly it. I would agree to use a probe to monitor temp and not use the pop up thing. Good luck!
