Father's Day Pork Belly Burnt Ends

My wife asked me what I wanted to eat for Father's Day... I told her I was in the mood to use the smoker and try something new. I found a couple of half way decent packages of pork belly at the local Winco, and I had seen a few others cook up the Pork Belly Burnt Ends and really wanted to give them a go. I cubed them all up and dowsed them liberally with my usual rib rub. Placed them on the rack with pans on the rack below (to catch the renderings), and cooked them for about 2.5hrs at 270. Plopped em in the rendered fat that dripped in the pans, covered them with brown sugar, and tossed in some butter (cause it needed more fat....). Covered them and put them back in for 1.5hrs. I didn't get any pics from the start of the cook, but I did remember to snap some right before wrapping and then when they were done. Everyone really enjoyed them! I will certainly keep them in the rotation for BBQ's, as they are really easy to do, and will make for excellent appetizers.:mrgreen:
