Had a blast griddling up a mess of chicken and sausage for 4 families tonight at the campground. Love love love griddle cooking :)

Food looks great as always. Can you describe you griddle cooking method please? I know you are cooking on a Camp Chef versus a Blackstone, but some of the methods may apply to both cookers. By methods, I guess I mainly mean heat control because the chicken looks like it has the perfect maillard reaction appearance.
