Default Cool nights are perfect to start

smoking cheese for the upcoming holidays. I invert a wire basket over a pan of ice and use my UDS to smoke these. It takes about 3 briqs and a thumb sized piece of apple wood for these small blocks to smoke about an hour. The temp will stay about 70 - 80 degrees with plenty of mild smoke flavor. These are great surprises to take to friends and family. Enjoy!

oooo ok. Why would you need ice? Sorry for being dumb about this. I want to smoke some cheese and trying to understand the process

The ice just helps to keep the cheese cool and prevent the rising heat from making the cheese sweat or even melt.
