Default New Reverse Flow/Santa Maria Cooker

My new cooker from AZ BBQ Outfitters has just came in. It is the newer version BootHill Cooker that works as a reverse flow smoker and santa maria grill (only the wood/charcoal grate raises and lowers not the food grate). I have not seen much information online for these so I decided I would share. Just finished the burn in so I will follow up again shortly with first cook. It has both Argentine grates and regular grates, whats shown is the Argentine with grease drain to outside.

The firebox is away from the cook chamber ��

How does she cook? They make really nice looking cookers and yours is a beauty!

I didn't ask why they separate the fire box like that, maybe less radiant heat? I will ask next time I call them. I have not cooked on it yet just did firebox and main chamber burn ins. I will follow up with first cook and info on temps etc.

I was seriously considering the Sedona which is BOTH a Boothill AND a vertical cabinet water cooker. Dave is top notch.
