I usually fire mine up every weekend and cook enough to provide meals throughout the week. I will cook tomorrow. I will hang pork spareribs and chicken, ABTs and a chuck steak.

Timing is something you can experiment with on the PBC. You should get a solid 6 to 8 hours from a coal basket. My plan for tomorrow:

- Chicken and ribs on at the beginning of the cook
- Chicken off at two hours, ABTs and chuck steak on
- Ribs off at 3 1/2 to 4 hours, ABTs off at the same time
- Chuck steak stays on until probe tender

Everything will be hung. I may transition the chuck steak to wrapped in butcher paper on the grate once everything else is off.

I'm glad that you started a appreciation thread for the PBC. It's one of my very favorite smokers on the market today. Simply put, the PBC kicks ass and takes names. Other than Shirley Fabrication, PBC is probably the most deserving smoker of a appreciation thread.

Wow! That's quite a compliment to compare it to a Shirley as far as being deserving of an appreciation thread! Those Shirley's are amazing.

I've thought of doing my cooking for the week on Sunday too.....maybe I'll get inspired by your plan. Let's see some pics tomorrow! :mrgreen:
 
In the midst of a long cook today I was reminded of another benefit of the PBC's low maintenance cooking method. There is no "smoke out" effect, where you lose your appetite and taste for your food until the next day!
 
Bob reminded me about trying out the 22.5 weber coal grate in the PBC to sit the PBC coal basket on for searing (I had forgotten. .oops). It's a tad smaller than the PBC grill grate but it fit. I have the version 1 PBC so I'm not sure if it'll fit the new version because I believe the tabs to hold the grill grate on are different in the V2. If they are the same size it should work. I pushed the coal grate all the way to one side and it still stayed on the tabs so it'll definitely work. Here's a centered pic.

By the way, I know you haven't cooked on one yet but the PBC is very air tight where it's supposed to be. :grin:

Thanks.I think the grate brackets on the PBC are about the same length as on the original.They are round pegs as opposed to the flat L brackets. I may try to do some veggie grilling this weekend.still have not used the new PBC with the iffy weather this weekend. Son will will be visiting us this weekend so definitely hoping to do multiple cooks. He likes my Q and the PBC.

Yeah, you gotta break in that new one! I'll be cooking up 3 racks of ribs next weekend on mine.
BTW, I've pretty much decided to get a new one. I like the porcelain coating and I like the idea of thicker Guage steel barrels. Plus I'm gonna get one with an Air Force logo. I think it's great Noah's got those military logos for military and former military members. ..very cool...:thumb:

I'll sell the one I have now. I should be able to sell it I mean it's a classic now..lol. I bought it used so no big deal. I'm looking forward to getting the new one though!

Doing some rebar cooking this weekend Bob...i could make and post videos to if it helps the PB cause.
