Got a pair of Duck breasts the other day and I decided to waste no time and grill em up with a salmon steak left over from Good Friday and of course some asparagus and garlic potatoes. To me, one of the best things about duck breasts is when you get that fat all rendered out thru the meat and the skin gets nice and crispy! It's hard to beat that.

I seasoned them up simply with the holy trinity for game: Rosemary, garlic and salt.. I used really good quality light soy for the salt along with some other herbs, scotch bonnet and a little black pepper. Let them sit overnight and threw them on to reverse sear with the salmon smoking as well (Just some salmon rub on that). Man, it came out SO good I even forgot to plate up the potatoes... Added them towards the end.

This is how it went down:

Had em smoking with some Lychee and Almond


Seared em up:


All nice and crispy:


All plated up ready to eat:


Oh yah, the forgotten potatoes:


Man this meal was awesome! The duck was so flavorful and juicy I just wish it wasn't so expensive out here. Need to go hunt some wild ones! I'm a happy man!

Phrasty, what a nice visual treat. wish i coulda been there to try the duck, which is one of my all time favorite meats. The rest of your meal is over the top. Thanks so much for the post!

Duck is my favorite meat perhaps, but certainly for poultry. Awesome job

And for what it's worth, the grill can't be beat. I've smoked them as well but that rendered, crispy skin is the best. It's the only poultrty that I eat the skin.
