I can't stress this enough. Mike speaks volumes of truth here!

If you are in Wilmington, go see Shane at United Refrigeration Inc. up there.
Buy your filters there and you will save a ton. You can also buy your coil cleaners there, too and clean the units yourself. This will also save you boatloads of cash!

Remember what I said almost a year ago. Cost way more than you think and takes way longer than it should. Don't cheap out and buy used refrigeration, it will only cause headaches and will cost you more in the long run. Best of luck, in the ever evolving restaurant game.

Oh man, I hope so. Then again, running out would be a (sorta) good problem to have! She'll be running 24/7 obviously and I have a small dining room (24 chairs right now with Covid). I have the space under the hood for another CTO (or 2!) at the end of my line should I need it. I would just have to move my wood outside in a shed.

Made some burnt ends on the Ole Hickory all day/night yesterday. Posted it on a 2 local FB groups and my page is picking up steam fast! Went from just under 200 likes to around 450 now in just about 10 hours! Why pay for marketing why you can just make delicious burnt ends and take a picture?

So far the response has been tremendous. Sold out 3 nights already, 4 catering orders thus far, and people seem to be loving the 'que. My 32 year old body feels like I am 97 though, and have hardly had time to sleep. Guess I should have expected as much.
