Default Test cook on my new smoker

I'm just about done with the smoker I made from a 275 gallon home heating oil tank (link to build).

Today I decided to fire it up and see how it works.
I loaded it up with some cherry splits and when it got up to temp I threw on 2 racks of untrimmed spares, seasoned with my signature Dynamite rib rub.

Temps are hovering between 275* and 300*.
This is my first time cooking on a stick burner, but so far everything is going great.

I'll post some pics when they're done.

Don't worry, still a few more episodes to go. Found some things that need to be fixed during these tests and still have to get it painted.

Ribs have been on the smoker for approx 3 hrs and 45 minutes.

Learning a lot about how to use this new cooker. Temp dips down 20* every 45 minutes or so and I throw on 2 more splits.

It's a wood hog for sure, so going to have to load this sucker up to make it worth while.

Wish I had computer access so I could show y'all the progress.

It's been a while since I cooked untrimmed spares. Not sure how much longer they're gonna take, but hope not too much longer.
