I was looking to utilize some stuff from the frig and pantry that were getting to the point of expiration. Ended up being some potatoes and veggies. My thought was to pull a roasting chicken or pork roast from the freezer. Ended up finding this forgotten nugget of goodness.

On to a 350 degree Kamado until reached an IT between 125 and 130 degrees.

Very nice. When I cook pot roast I like to use royal au jus base it always tastes awesome.
 
Looks good. I would like to find a nugget of meat like that in my fridge.
