Default Olive Garden Toscana Soup

The wife was gettin' busy in the kitchen yesterday and boy am I glad she did. This was a fantastic soup!

Start by cooking up some bacon.



Add in the onions and garlic and cook to translucency.





Add in your spices, chicken soup stock and cooked sausage.



At this point you would add thinly cubed potatoes, but we had some dehydrated hash browns, so we hydrated them with the chicken stock and added to the soup.



Stir and let cook.



We then added some Arugula and cooked for a few more minutes, then added heavy cream before serving.







Top with some shredded asiago cheese and pepper and serve.



This was very delicious and will be added to our "keeper" recipes.

Very close. We chose Arugula versus Kale as the only Kale I enjoy is the one with the silent K.

I love their Pasta e Fagioli. I use the Top Secret Recipes copycat recipe. It's spot on.
