Default Sourcing Meat

I live in a small town of 1900 in west-central Illinois. St. Louis is the closest "real" city and it's 2 1/2 hours away. I'm looking for a more reliable meat wholesaler who can provide me with brisket, pork butts and baby back ribs without me worrying that they'll run short.

Who do you guys use? Is there a national level wholesaler out there? Sysco, US Foods, Reinhart, etc. are too far away.

I buy from four sources. Two being regional, one being local butcher, and Sysco.. I get the bulk of my stuff from Sysco.

You have a number of restaurants in Mount Sterling, they have to have someone deliver their food, and meat. Find out who they use. Just because you arent in a large city doesnt mean Sysco, US, or Reinhart wont deliver to your area. You may have limited number of days you can order, but will still deliver.
