Default West End Girls...

...smoked meatloaf

1.07# ground certified black Angus beef
1 egg
1 teaspoon Chef Merito Asada
3 dashes Worcestershire
1 teaspoon Civil War Sauce
3 teaspoons French’s catsup
12.5 Crushed Saltine Crackers

Veggies

Sauté onion, yellow bell, 1 roasted green chile, celery and at end garlic

Sautéed veggies and cool. Mix Meat mixture in #6 Griswold or Wagner cast iron and chill. When everything is cold mix and fold. Don’t compact. Caress it don’t assault it. Set cooker to 225 and go ride a bike an hour or so. Should be around 147-150. Paint top with favorite glaze. Wife like French’s catsup. Easy peasy. Let glaze set to 165+. Remove from cooker and allow to set up for 8.5-22.3 minutes.

Enjoy

Aside from a well grilled HOTDOG nothing in this world comes close to a proper meatloaf. This one looks righteous!
