Make a bechumel, add mild and sharp cheddar to it to make a cheese sauce. Season with salt, pepper, and paprika. Then I add in, sauteed onions, garlic, jalapenos and bacon.
When mixing the sauce and rotinni I add generous amounts of hand shredded muenster. Top with more muenster and bacon. Smoke for a bit.
Adding the muenster at the end makes it stringier.

Pre...just a bit. 5 minutes. Need to try a small batch and do it without pre-cooking the noodles.Is the pasta precooked or uncooked?
