Quick question, which length thermometer stem, did you go with? The Teltru thermometers I'm looking at, show 2.5" and 4". I'm worried 4" might be too long, might hit the meat on the rack. Thanks! :)

For mine, I've been using the short Western Wood logs from Academy as it an easy trip for me rather than spec out some firewood seller. I got/use the therms that Academy sells. They're fairly good for the most part but would go w/ a TelTru over it if I wanted to spend money on one. I would say that the shorter stem would be better just in case of getting a false reading from being too close to meat. I found that the best positions on mine are the top & bottom holes so have one in each. I use a bed of coals of the red bag B&B briquettes (little round extruded tubes) or green bag B&B hickory lump w/ a log or 2 depending on what's in the bag I got to get my fire going at 275ish. Once going I can get 30min-1hr depending on log size (is piece from limb or trunk of tree?) For me it takes normally 30min to 1hr to get fire burning right & to temp & smoker all heated up depending on logs/weather conditions. I set my next log on the fire on the side shelf to heat up that way I get a slightly better burn from it when it goes on the fire.

Hogzillas, if you don't preheat the splits how do they burn? I thought kiln dried wood burned pretty easily.

I don't preheat splits cuz got no place to preheat them with the Smokehouse......same with BoomShuckaLucka.......

I get a little more white smoke for a longer period of time when I don't & it seems like the logs just catch better when they're closer to fire temp. It could all be in my mind though as it can be off at times

Hello All. I'm new here but been following this thread a while. Got lucky and found a deal I thought I'd share. Just picked one of the models like the OP’s....3/16 walls! In Uvalde TX.

As of yesterday there were two left....on closeout for $725.....told me that was their cost they are just trying to get rid of them because they did not sell well.

If the original price was $999.99, I think it is the big brother of the Smokehouse... just like how they had the big brother of the Over/Under at Buc-ees for $999.99.

It could be a different animal- that's a fact. Not much way to tell from the pictures. If it IS a bigger OC Smokehouse than what Academy sells (sold?), it might be a good deal.

Cool.! Is it 20x20 or 24x20.? Says 22" in CL Ad. Looks just like mine - mine is 20x20". Before Old Country got the contract with Academy he had Ag Stores, Mom n Pop Hardware stores, Feed Stores etc... selling Old Country smokers - they were all 3/16" n 1/4" models. He still supplies a few of his original vendors.
Academy series is mostly 14 gauge stuff per Academy for weight n cost. Black name plates are lighter gauge series and silver name plates are heavy gauge series. QC is a lil better on the Heavier gauge stuff - much like a Pecos vs a Brazos at Academy.
That's a Great price. A couple local Fab guys told me $1100 -$1200 to make a 3/16" Smokehouse copy.
